Glenn’s Celery Stuffed with Yogurt and Blue Cheese

Low Carb Pot Luck - including stuffed celery

 

Glenn’s stuffed celery sticks were part of a pot luck conducted by the Boulder Very Low Carb Diabetes Support Group, where we encouraged people to bring “tasting” size portions with no more than 5 grams carb in an actual serving, and smaller samples still for more tastings. 

Serves 20 people, one celery “stick” each with 4.5 grams carb each

  • 1 16-ounce container Nancy’s whole milk plain yogurt (2 cups)
  • 1 4-ounce Salemville container crumbled blue cheese
  • 1 bunch of celery
  1.  Using cheesecloth or a fine-mesh metal sieve, strain the whey out of the yogurt so that it’s thick and firm, like Greek yogurt (this is a crucial step to keep the stuffing from being runny)
  2. Mix the strained yogurt and the blue cheese
  3. Wash and slice the celery to make roughly 20 “sticks”
  4. Fill each celery stick with the stuffing, then arrange on a plate and serve
